The Best Spring Salad

CRUNCHY SPINACH BERRIES SALAD

A light and healthy spinach salad with fresh berried and a crunchy almond topping tossed in a delicious homemade dressing. This Crunchy spinach berries Salad is perfect for Summer!


Ingredients:

  • 1 package ramen noodles
  • 1 cup chopped walnuts
  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 cup canola oil
  • 2 Tablespoons red wine vinegar
  • 1/2 teaspoon soy sauce
  • 8 cups torn romaine lettuce
  • 1/2 cup chopped green onions
  • 2 cups fresh strawberries, sliced

Discard the seasoning packet from the ramen noodles (or save for another use). Break the noodles into small pieces. In a large skillet, cook noodles and walnuts in melted butter over medium heat for 6 minutes or until golden brown. Make sure you stir frequently so they don't burn! Remove from the heat and cool.

For the dressing, in a small bowl whisk together the sugar, oil, vinegar, and soy sauce until well combined. Just before serving, combine the romaine, green onions, strawberries, and noodle mixture in a large bowl. Drizzle with dressing and toss gently.
